Origin and procurement

We integrate quality, safety and sustainability into our procurement choices. Through traceability systems, certified products and data collection and analysis, we are progressively strengthening our knowledge of impacts along the supply chain, starting from the origin of raw materials.

Responsible purchasing and sustainable supply chains

In selecting products we favour organic and fair-trade raw materials, from certified supply chains and short local supply chains, in compliance with tender specifications and the Minimum Environmental Criteria for institutional catering. By progressively guiding purchasing across all our services, from food service to facility management, also on the basis of environmental and social criteria, we promote more sustainable supply chains.

Traceability and safety

We oversee food safety and product traceability throughout procurement and production. Through structured checks and processes we verify the origin and compliance of the raw materials we use. To support this commitment we have adopted an Integrated Management System certified to ISO 9001, ISO 22000 and ISO 22005, which allows us to oversee quality, food safety and traceability. Supply chain verification also extends to suppliers through qualification processes and dedicated audits.

The next frontiers

Our goals: Measuring to improve

Today our measurements are based on estimates, because we often operate in facilities we do not own. We cannot make promises we cannot measure. Here are our concrete commitments for the coming years:

  • Map actual consumption: Implement a new data collection system that records water consumption alongside invoices, covering around 300 delivery points

  • Increase certified sites: Move from the current 6 sites with Ecolabel cleaning to 14 certified sites by 2028

  • Raise awareness in the team: Launch annual training for the entire workforce to promote good practices in water use
